Menu Plan Monday


Wow, what a week last week turned out to be! Everything got started back and we were hammered with all the extra work (and effort it took). The menu was a real help. We did everything but the egg salad on Friday. We ended up not getting home until after 8:30 so we grabbed some Zaxby's Chicken!

There is a lady who brings her kids to the same YMCA co-op that we attend who has chickens. She literally gathers the eggs that morning and brings them to me. And charges me almost the same as the cheaper kinds at the grocery store. How can I resist?

So again, I have an abundance of eggs and some buttermilk (from a cake for my 13yo's birthday Saturday!) that I'm working with this week.

Monday - Homemade beefy onion lasagna with homemade cheesy garlic biscuits.

Tuesday - Spicy crock pot beans and buttermilk cornbread

Wednesday - Bean burrito w/leftover beans, lettuce, cheese, sour cream, picante', etc

Thursday - Crock pot cooked whole chicken, creamed corn and homemade rolls

Friday - Chicken salad sandwiches

OK Michelle, fess up. I must have the recipe on that homemade beefy onion lasagna- sounds like it would be a hit with my hubby! :)

I used to have a lady I bought eggs from at our co-op. Unfortunately she moved and I haven't found anyone else. I really miss those eggs because they tasted so much better.

Andrea, I put the lasagna recipe on my list of things to post. Thanks for asking about it! It's really good.

Carrie, I completely agree. I promised the woman that I'd buy all the eggs that no one else wants that week (because I didn't want her to have the inconvenience of having to take them back home because she lives quite far from the co-op) and I didn't want her to get discouraged and stop selling them! So I end up with between 1 dozen and 4!

If I get too many I just give some away. But I love that they're so fresh. And I don't worry about eating these "over easy" or putting them in ice-cream!

Michelle, I found that baked goods that used eggs, like my favorite Egg Custard pie, were much richer and more flavorful. Wish I lived closer and I would gladly take some off your hands.

No I haven't posted it. I'll find it and post is as soon as I can. I thought after Labor Day things would slow down. Wrong!
